Jordan Pond House Favorite
The famous recipe for Jordan Pond House popovers'has
changed little over the years. We are printing two versions
of it the first and more recent is from the Jordan Pond
Cookbook; the second was given to Marion Kimball of
Northeast Harbor by her close friend, Edith McIntire
Kimball, daughter of T.A. McIntire, Proprietor of the
Jordan Pond House for the first 50 years.

At about this time, Charles
T. How, a realtor from Boston
and one of the first real estate
developers in Bar Harbor,
bought the farm, with the
hope of entertaining prospec-
tive land buyers. Fortunately
for the future history of the
place, his ambitions failed.
In 1895, Thomas A. Mc-
Intire leased and soon bought
the farm. As a boy, he had run
away from his home on Prince
Edward Island and had
become a skilled carpentar
and architect in Bath, Maine.
In 1896, Mr. and Mrs.
McIntire opened a tea house,
which for many subsequent
years was but one of many
such eating places on the
island. After that first season,
the proprietors were pleased
to have had forty-four guests
for dinners during the sum-
mer. Breakfasts and lunches
were also provided.

A covered veranda was
added to the farmhouse. Some
of the luncheons served there,
when the weather was favor-

known as "piazza parties," in
which Bar Harbor's best

The Bar Harbor Record
reported in 1897 that "The
Jordan's pond house has been
doing a thriving business
under the management of Mr.

success and he appears to
have attained it if one may

In 1899, the newspaper
described the outcome of the
"favorite waitress" contest:
"Bertha Walls, who had been
